Котлеты по-киевски известны еще с советских времен. От других котлет их отличает то, что они готовятся из отбитого куриного филе.
Начинкой служит масло с всевозможными добавками, которое вытекает при раскусывании этого сочного изделия с хрустящей корочкой, наполняя рот изысканным вкусом и ароматом. Такой шедевр привлекает всех, независимо от возраста и вкусовых предпочтений.
Попытка найти идеальный рецепт котлет по-киевски в интернете будет бесполезной, т.к. существует правило – чем больше рецептов здесь, тем больше вариантов приготовления котлет можно встретить.
Для приготовления 2-х порций понадобится:
- куриное филе (2 шт.); сливочное масло (80 г); чеснок; укроп; петрушка;
- яйца (2 шт.); соль; перец; сухари панировочные; подсолнечное масло.
Котлеты подают в горячем виде с гарниром из риса, овощей, картофеля фри, просто картофельного пюре. В начинке с маслом прекрасно гармонируют грибы, яйца, сыр.
Рецепт приготовления
- Первым делом готовят начинку. Для этого потребуется размягченное сливочное масло, которое смешивают с укропом, можно добавить сыр. Сворачивают смесь колбаской, заворачивают в пленку, кладут в морозилку.
- В курином филе отделяют большую часть от маленькой, каждую отдельно отбивают через пленку, солят, перчат. Получается два тонких блина, в них начинают заворачивать замерзшую начинку. Сначала в маленький блин, затем получившееся изделие оборачивают большим блином. Сворачивать нужно довольно туго, чтобы начинка не вытекала. Для лучшего склеивания мяса руки должны быть мокрыми. Края блинчиков можно присыпать мукой для лучшего сцепления.
- Для приготовления кляра смешивают яйца с мукой. При желании можно добавить туда немного молока. Смесь будет более нежной. Изделия сначала обмакивают в кляр, затем дополнительно тонируют в сухарях. Это придает котлетам прочность и такую вкусную хрустящую корочку. Очертаниями идеальные котлеты по-киевски напоминают эллипс. Для получения неповторимого аромата при жарке можно в сухари добавить сушеные травы, специи.
- Готовые котлеты помещают в морозильник на 10 минут для закрепления формы. После этого их достают, быстро обжаривают на сильном огне, затем помещают в хорошо нагретую духовку, где изделия обжариваются до готовности.
- При подаче на стол котлеты лучше предварительно проткнуть вилкой, чтобы выпустить горячий пар. Иначе едок будет ошпарен при их раскусывании.
К котлетам по-киевски подойдет любой соус – сырный, молочный, томатный, грибной. Он улучшит вкус блюда и украсит внешний вид.
