Правила приготовления вкусных зраз

Для того, чтобы узнать необходимые ингредиенты и их количество, можно смотреть рецепты на reciple.kz, но не всегда там можно найти советы по правильному приготовлению.

Приготовить замечательные вкусные зразы можно легко если знать некоторые секреты:

  • сорт картофеля для приготовления должен содержать большое количество крахмала. Рекомендуется отваривать картофелины одинакового размера, чтобы они равномерно проварились. Если картофель не сильно крахмалистый, то его лучше отварить в мундире.
  • картофельное пюре должно остыть, прежде чем смешивать его с яйцами и мукой, так яйца не сварятся, а тесто будет иметь красивый цвет;
  • чтобы во время формирования зраз, картофельное тесто не липло к рукам, их нужно периодически смачивать в воде;
  • для хорошей прожарки и красивой равномерной корочки, жарить полуфабрикаты нужно в хорошо нагретом масле;
  • изделия обретут вкусную и хрустящую корочку, если перед приготовлением их обвалять в панировке;
  • в качестве дополнения к блюду можно подавать зелень, различные соусы, соленые и маринованные овощи.

Последовательный рецепт приготовления

  1. Для начала необходимо приготовить картофельное тесто. Картофель (5 штук) моют, чистят и варят в подсоленной воде до полной готовности. Воду сливают и оставляют отваренный картофель обсохнуть. После чего его, еще горячим протирают через сито, добавляют 35 грамм сливочного масла и оставляют остывать примерно до 50 градусов. В теплую картофельную массу, теперь добавляют 1 сырое яйцо, и все тщательно вымешивают.
  2. На следующем этапе замешивают фарш. Для этого чистят и моют 2 средних луковицы, нарезают мелкими кубиками и пассеруют. Добавляют обжаренный лук к 500 граммам перекрученного мяса, приправляют солью и перцем, и все перемешивают.
  3. Теперь можно приступать к формированию зраз. Порцию картофельной массы для одной зразы выкладывают лепешкой на ладони, в центр выкладывают ложку фарша и соединяют края картофельной лепешки.
  4. Последний этап – обжарка. Сформированный полуфабрикат обваливают в панировке и выкладывают на сковороду с разогретым маслом. Обжаривают с обеих сторон до золотистой корочки. Довести до готовности нужно в духовке.

Подают зразы в горячем либо холодном виде, сдабривают сливочным маслом или сметаной.
