Салат «Цезарь» - одно из популярнейших современных блюд. Он полюбился людям за оригинальный вкус и простоту приготовления. Сделать его самостоятельно не составит особого труда.
Классический рецепт
Услуга «доставка салатов» сегодня есть практически в каждом городе. Те, кто ее используют, часто заказывают салат «Цезарь». Появился он благодаря Цезарю Кардини, открывшему после Первой мировой войны небольшое кафе на территории Мексики.
Поскольку в то время в Соединенных Штатах действовал «сухой закон», кафе Цезаря чаще всего посещали, чтобы заказать выпивку. В один из дней посетителей было так много, что закусок на всех не хватило. Тогда Цезарю Кардини пришлось импровизировать на ходу.
Он соединил яйца, салатные листья, кусочки хлеба, чеснок, пармезан. Заправил эти ингредиенты оливковым маслом и соусом на основе сахара и уксуса. Получившееся блюдо хозяин предложил гостям своего заведения. Так появился знаменитый салат «Цезарь», не теряющий популярности по сей день.
Современный рецепт салата в классическом исполнении не сильно отличается от оригинального. Чтобы его приготовить, понадобиться провести небольшую подготовку.
Желтки двух вареных яиц и измельченный чесночный зубчик взбить со 100 г масла оливкового, 2 ст. л. дижонской горчицы, лимонным соком и небольшим количеством вустерского соуса. Сегодня его часто заменяют на соевый.
Следующим этапом нужно приготовить крутоны:
- Сделать из мякиша багета небольшие кубики.
- Поджарить их на сковороде, смазанной маслом с добавлением чеснока.
- Как только хлебные кубики приобретут золотую корочку, снять с плиты сковороду, остудить.
Непосредственное приготовление салата займет минимум времени. Нужно лишь порвать вручную салатные листья романо, добавить к нему 50 г. тертого пармезана, остывшие крутоны, влить подготовленную заправку, перемешать.
Современные вариации
Классический вариант – не единственный способ приготовления знаменитого салата. Сегодня распространены вариации с добавлением:
- Куриной грудки и томатов черри. Мясо курицы перед добавлением в салат обжаривают.
- Креветок. Предпочтение отдается свежим креветкам. Их также предварительно обжаривают. В заправку для такого салата вместо вместо вустерского соуса добавляют натуральный йогурт.
Еще одна оригинальная вариация – Цезарь» с красной рыбой. Вместо куриного мяса или креветок в него кладут соленую семгу, горбушу или форель.
Вообще, «Цезарь» относится к универсальным салатам. Его рецептов существует множество. Каждый сможет приготовить для себя вариант по собственному вкусу.
