Свежие огурцы. Даже трудно представить, в какой бы салат они могут не подойти. Можно каждый день готовить салаты с использованием свежих огурцов и не повториться. А главное, они не могут надоесть. А как здорово пахнут огуречные салаты – это свежесть, лето, это же запах близкого отпуска. Особенно хороши летние огурцы прямо с грядки. Так что же нам выбрать интересного из множества салатов со свежими огурцами?
Пусть это будет салат для любителей острого. Берём три огурчика, луковицу, головку чеснока, лимон, два стручка острого перца. Огурцы моем, нарезаем тонкими кружками и помещаем под гнёт на час. Затем сливаем сок. Нарезанный лук поджариваем на постном масле, пока он не станет золотистым. Из красных перчиков удаляем плодоножки и семена, нарезаем их тоненькими полосками. Очищенный, нарезанный чеснок смешиваем с перцем.
Подготовка закончилась. Выкладываем огурцы в салатницу, к огурцам добавляем обжаренный лук, чеснок с перцем, соль, молотый перец. Туда же выдавливаем сок лимона. С лимоном смотрите сами – можно для сока использовать весь лимон, а можно половину, а вторую половину нарезать и украсить ломтиками салат.
Если такой салат кажется вам излишне острым, давайте приготовим другой. Опять же берём огурцы. Штуки четыре нам хватит. Ещё нам понадобятся три помидора, два сладких перца, две луковицы, постное масло, уксус. Моем овощи. Режем огурцы и помидоры кружочками, а перец соломкой. Овощи перемешиваем, добавляем масло, уксус, молотый перец, соль.
А украшаем всё петрушкой и укропом. Такой вот крестьянский салатик получился у нас. Этот салат можно использовать как основу для фантазий. Туда хорошо подойдут и редиска и отварное яйцо – целое или только желток. У вас получится более яркий и совсем не острый салат с малым количеством калорий.
