Качественная черная икра давно уже стала деликатесом. И если несколько сот лет назад этот продукт употребляли в пищу крестьяне, и он считался условно съедобным, то сегодня цена икры иногда составляет несколько тысяч рублей за килограмм, и она доступна только 5% населения нашей страны.
Однако многие россияне приобретают этот дорогостоящий продукт на семейные праздники и украшают им праздничные столы. Даже одно блюдо, на котором размещены оригинально приготовленные бутерброды с черной икрой, необычно мерцающей под светом бра, легко становится изюминкой всей сервировки. При этом черная икра обладает великолепными вкусовыми качествами. А различные микроэлементы, наличием которых может похвастаться этот изысканный продукт, давно уже признаны полезными как взрослым, так и детям.
Стоит отметить, что сегодня в продаже многих интернет-магазинов представлены различные икорницы, которые предназначаются для красивой сервировки стола. Эта специальная посуда для икры обычно изготавливается из материалов, которые позволяют надолго сохранить свежесть дорогого деликатеса.
Классифицируется черная икра в зависимости от вида рыбы на осетровую, белужью и севрюжью. Белужья черная икра является наиболее полезным продуктом. Согласно мнению экспертов эта икра в своем составе содержит множество полезных микроэлементов. Поэтому цена на белужью черную икру несколько выше по сравнению с остальными видами икры этого типа.
Также черная икра подразделяется по способу ее обработки. Так, подается в ресторанах и реализуется на рынках зернистая черная икра, икринки которой превосходно друг от друга отделяются. Для изготовления зернистой черной икры применяется только продукт, степень зрелости которого не ниже 4. Паюсная черная икра – продукт, получаемый из севрюги. Иногда в паюсную икру добавляется небольшое количество осетровой. Ястычная черная икра – самая дешевая икра, для изготовления которой используется худшая часть улова.
Конечно, при покупке черной икры можно попытаться сэкономить – к сожалению, до сих пор в России реализуются нелегальные партии этого товара. Очевидно, что цена такой черной икры несколько ниже аналогичного продукта, изготовленного с соблюдением всех норм и требований. Однако несоблюдение технологий обработки икры может породить различные негативные последствия – употребление в пищу недоброкачественного продукта часто вызывает заболевания. Поэтому покупка черной икры у сомнительных продавцов может стать опасной не только для здоровья, но и для жизни потребителей.
