Этот рецепт был придуман в Риме ресторатором Альфредо для жены, у которой после рождения ребенка пропал аппетит. Из сливочного масла и середины сырной головки итальянец сделал соус к пасте, который получился настолько нежным, что в восторг пришла не только жена Альфредо, но и посетители ресторана.
Рецепт разлетелся сначала по всей Италии, а потом и по всему миру. Со временем появились вариации с курицей, морепродуктами, грибами и другими ингредиентами. Соблюдать в точности необязательно, но паста не будет пастой Альфредо, если в соусе нет сливочного масла, сливок и сыра Памерзан.

Ингредиенты:
* спагетти – 800 г.
* сливки густые, жирностью от 20% – 400 г.
* масло сливочное – 80 г.
* сыр Памерзан – 100 г.
* соль, перец по вкусу
* зелень
Отварить первым делом спагетти до состояния аль денте, то есть до полуготовности. Варятся до такого состояния они в среднем 8-10 минут. Потом слить воду и накрыть крышкой, спагетти «дойдут» пока готовится соус. Промывать макароны не нужно!
В глубокой сковороде довести до кипения сливки. Добавить сливочное масло, а после его растворения тертый сыр. Можно оставить часть сыра на посыпку готового блюда можно высыпать весь в соус. В последнем случае соус будет гуще и более вязкий. Приправить по вкусу перцем, солью, а также можно добавить измельченную зелень. Соус нужно все время помешивать и варить до момента, пока сыр не расплавиться.
Не переставая мешать соус Аальфредо переложить еще горячие макароны в сковороду, перемешать и оставить под крышкой на пару минут, чтобы они хорошо пропитались соусом.
Подавать нужно сразу же, украсив зеленью. Можно также посыпать оставшимся от соуса тертым сыром.
