Пошаговый рецепт свиных ребрышек
Ингредиенты:
- 1,5 кг свиных ребрышек;
- 1 часть апельсинового сока свежевыжатого;
- 1 часть темного пива;
- зубчики чеснока;
- черный и красный жгучий молотый перец;
- молотая паприка;
- сушеные розмарин, тимьян, мята;
- соль;
- 2 части рафинированного подсолнечного масла.
Порядок действий:
- Ребрышки нарезают на порционные куски и натирают давленым чесноком, ароматными травами, перцем и солью.
- Жидкие ингредиенты смешивают и обваливают в них ребрышки.
- Мясо убирают на 4-6 часов в холодильник.
- Ребрышки выкладывают на решетку гриля и жарят, переворачивая каждые 5-10 минут до желаемой степени готовности.

Свиные ребрышки классифицируются на две группы — вырезаемые со спины (корейка) или грудной части туши. Вторая разновидность отличается большим количеством прожилок, что с одной стороны — сберегает мясо от пересушивания во время жарки, а с другой — вынуждает дольше и тщательнее его мариновать. Также эти ребра более прямой, плоской формы — готовить их удобно.
Зачастую грудные ребрышки продают цельной пластиной, насчитывающей до 11 штук, общим весом 1,1-1,6 кг и важно учесть, что половина, а то и больше этого веса приходится на чистые кости.
Если ребрышки были заморожены, до маринования и приготовления они должны оттаять естественным щадящим методом в холодильнике. Недопустимо ускорять процесс — это приведет лишь к ухудшению текстуры и вкусовых качеств мяса.
Помимо указанных выше ингредиентов, для маринования часто используют горчицу, мед, имбирный корень, соус табаско, красное вино, гранатовый сок.
Чтобы мясо получилось еще более сочным и вкусным, за 10 минут до окончания приготовления его нужно обмазать соусом. Например, барбекю. Если под рукой нет готового, его можно создать из 1 стакана кетчупа (томатного соуса), 2 чайных ложек вустерского соуса, небольшого количества яблочного уксуса, тростникового сахара и соевого соуса.
Готовые ребрышки рекомендуется подавать не мгновенно, а после снятия с решетки на 5 минут завернуть в лист пищевой фольги.
