Пищевые добавки – элементы, используемые людьми независимо от продуктов питания. Порошки добавляются в пищу во время производства, упаковки и транспортировке продукции.
Подобные вещества, в том числе и молочный топ, позволяют сделать продукт более привлекательным в глазах потребителя: цвет, аромат, блеск, консистенция, текстура и срок годности.
Виды
Выделяются несколько разновидностей беcфосфатных пищевых добавок:
- Краситель. Добавки данной категории позволяют придать продукту необходимый окрас. Такие порошки нельзя добавлять в мясо, яйца, молочную продукцию, фрукты, овощи и чай. Также запрещено добавлять красители в детское питание. Красители подразделяются на несколько разновидностей: натуральные (изготовленные из натуральных компонентов), синтетические (красители, созданные с использованием химических компонентов) и минеральные (порошки из минеральных компонентов).
- Консерванты – добавки, позволяющие сохранить продукцию от преждевременной порчи. Порошок способствует уничтожению бактерий и грибков, способных съесть продукт. Поскольку добавки негативно воздействуют не только на микроорганизмы, но и на организм человека, их использование ограничено.
- Антиокислитель – порошок, необходимый для хранения жиров и регулирования вкусовых качеств продукта. Большинство антиоксидантов изготавливаются из натуральных компонентов.
- Стабилизатор – добавки, позволяющие добиться необходимой консистенции продукта и сохранить ее на длительный период. К элементам относятся: загуститель, эмульгатор, стабилизатор.
- Регулятор кислотности – группа порошков, которая также позволяет сохранить консистенцию товара.
- Ароматизатор – усилитель вкуса, необходимый для добавления естественного вкуса продукта, делая его более привлекательным.
Выбор
Выбирая продукты, важно обращать внимание на информацию на упаковке товара. Производитель должен детально описать необходимость добавки, индекс и наименование. Также важно обращать внимание на ароматизаторы, поскольку честные производители не будут указывать о наличии ароматизатора, используя комплексные добавки.
Не желательно приобретать продукты, в которых содержатся консерванты и антиокислители, поскольку это одни из вредных порошковых добавок, способных вызвать мутацию организма (при употреблении в больших количествах).
